REVERSE APERITIVO

A slice of Sydney washed ashore in Canggu this weekend, when our friends from the Harbour City took over The Slow for the eve. We’re talking about Surry Hills heroes The Dolphin Hotel (led by hospo heavyweight Maurice Terzini) and Scout Sydney, the drinks lair getting plenty of attention for its experimental tipple.

The night itself was a twist on the traditional aperitivo, for which The Dolphin has become famed. Kicking off from 7.00pm, Reverse Aperitivo doled out Italian-inspired plates like caccio e pepe churros and spaghetti al burro from Monty Koludrovic and Sarah Atton of The Dolphin. Guests sipped on a selection of natural wines, and specialty cocktails dreamt up by Scout Sydney bartender Antonello Arzedi.

But it wasn’t just about feasting alone, with the immersive experience enhanced by the projections of artist Carla Uriarte, whose works were strewn across the walls of The Slow, joined by posters from Brett Chan.
